Garlic and Gouda Mashed Cauliflower

Serves: 4

Ingredients

     
  • 1 head cauliflower, cut into florets
  • 32 oz vegetable broth
  • 6 cloves garlic
  • 2 tbsp sour cream
  • 4 tbsp butter
  • ¼ cup heavy whipping cream
  • 4 oz Gouda cheese, shredded
  • salt, to taste
  • generous grinds of black pepper

Directions

     
  1. Roast the garlic in the oven for 30 minutes at 400ºF.
  2. Pour the vegetable broth into a large stock pot and heat over medium-high heat. Place the cauliflower florets into the broth, cover, and simmer for 25 minutes.
  3. Melt the butter and add it to a bowl with the roasted garlic, sour cream, and heavy whipping cream. Whisk the ingredients together.
  4. Add the cauliflower to the sauce and mash to desired consistency.
  5. Add the cheese, salt, and pepper to the cauliflower and mix until the cheese is melted.
  6. Top with more pepper, butter, and green onions.
