Ingredients
- 1 head cauliflower, cut into florets
- 32 oz vegetable broth
- 6 cloves garlic
- 2 tbsp sour cream
- 4 tbsp butter
- ¼ cup heavy whipping cream
- 4 oz Gouda cheese, shredded
- salt, to taste
- generous grinds of black pepper
Directions
- Roast the garlic in the oven for 30 minutes at 400ºF.
- Pour the vegetable broth into a large stock pot and heat over medium-high heat. Place the cauliflower florets into the broth, cover, and simmer for 25 minutes.
- Melt the butter and add it to a bowl with the roasted garlic, sour cream, and heavy whipping cream. Whisk the ingredients together.
- Add the cauliflower to the sauce and mash to desired consistency.
- Add the cheese, salt, and pepper to the cauliflower and mix until the cheese is melted.
- Top with more pepper, butter, and green onions.
